Our series classes are for those who are interested in
pursuing a deeper understanding of the culinary world. All
classes are hands on and vary in length. We invite you to
join us on a life long adventure that is the world of food!
Class size is limited and pre-registration is required.

The Dinner Club - North Escondido
Fridays: September 5th - September 26th, 2008 (4 weeks)
6pm - 9pm         Fee: $200.00

Join your friends or make new ones in a fun filled atmosphere of communal dining.
The menu is never the same and everyone participates in creating the meal from
appetizer to dessert! Bring an apron, chef’s knife and containers to carry leftovers!


Cooking 101 -
Escondido Adult School's San Pasqual High School
Mondays: September 8th - November 17th, 2008 (10 sessions)
6pm to 9pm              Fee:  $190.00

Explore the magic of cooking in this hands on class where you will learn the fundamentals to cooking well. Learn what equipment you need, how to stock your pantry, all about herbs
and spices, cooking oils and what the different cooking techniques are and when to use
them.  Bring a chef’s knife, apron, cutting board and containers to transport your creations
home.


Catering 101 - So, you want to be a Caterer?! Part One

Thursdays: September 11th - October 2nd, 2008 (4 sessions)
6pm to 9pm                Fee: $115.00

So, you want to be a caterer but have no idea where to begin? Join us as we explore
the world of catering. From food to the business side, learn the how tos of event and menu planning, purchasing, food preparation, staffing requirements and a host of other valuable
tips to help you on your way to becoming the next great caterer!

Catering 102 – So, you want to be a Caterer?! Part Two
Poway Adult School's Poway High School Titan Café
Thursday October 9th - November 6th, 2008 (4 classes) 6pm - 9pm                              Fee:  $115.00  

Join me as I continue to prepare you to become San Diego’s next premier caterer. You’ll
learn the fundamentals of catering:  event planning, food cost management, menu
planning, table display, food presentation and so much more in this lecture and hands on
series. Supply lists will be available the first day of class. Bring a chef’s knife, apron, and
containers to transport your creations home. (You must have taken Catering 101 in order to
take this class.)

Catering 103 – So, you want to be a Caterer?! Part Three

Thursdays, November 13th - November 20th, 2008 (2 classes) 6pm - 9pm      Fee:  $85.00  

You’ve taken Catering 101 and 102 and want to perfect your food presentation skills. We’ll
focus planning a menu, preparing the food on the menu and presentation. Supply lists will
be available the first day of class. Bring a chef’s knife, apron, and containers to transport
your creations home. (You must have taken Catering 101 and 102 in order to take this
class.)

Cooking 102 (4 sessions)

You've taken cooking 101 and are ready to spread your wings! Learn in         a hands on atmosphere what chefs know about the true nature of cooking while improving your
technique. Bring a chef's knife, apron, cutting board and containers to transport your
creations home.

Cooking from the Heart  (4 sessions)

Really good cooks don’t follow recipes, they follow their heart. A pinch of this, a dash of that leads to the most splendid alchemy. Join us as we explore the art of cooking from the heart
where you will learn to depend on your five senses to create the most amazing dishes ever!
Bring a chef’s knife, apron, cutting board and containers to transport your creations home.
 

Around the World in 6 weeks (6 sessions)

Join us as we explore the nuances of cultural cooking. Learn how to make wonderful dishes representing Greece, Spain, Italy, China, Thailand and India. Explore the flavors of
each country as you cook your way around the world. Each class is focused upon one
culture with each week an adventure in the making. Passports are not required, just a
hearty appetite and a love of adventure. Bring to class an apron, chef’s knife, cutting board
and containers so you can take your creations home.


The Art of Cuban Cooking   (6 sessions)

Join us as we explore the tantalizing foods of Cuba, Miami style. Find out what makes this cuisine impossible to forget and leaves you wanting more. Learn the secrets of the Cuban
kitchen in both a demonstration and hands on atmosphere. Each class focuses on one
component of Cuban cooking, so we do suggest you take them all!  A love of garlic is
required and aprons are a good idea! We’re having a party, Cuban style and you’re invited!



Mediterranean Cuisine  (3 sessions)
